Friday's are always a reason to celebrate, but this week is an excuse to make it extra festive- for St. Patricks Day! If you want to be the most popular coworker in the office, whip up these easy treats the night before and bring them into work to get the Irish spirit in the works. Rice Krispie Treats are pretty much the easiest dessert to pull off, but this recipe has a little twist that gives you extra points for being thoughtful and adorable.
Lucky St. Patty's Rice Krispie Treats
All you need to pick up from the grocery store on your way home is:
- 1/4 cup of butter (that's 1/2 a stick)
- 4 cups of soft marshmallows
- 1/2 teaspoon of vanilla extract
- Green food coloring (obviously!)
- 5 cups of Rice Krispie cereal
- 3/4 cup of Lucky Charm’s marshmallows (just pick them out of the cereal!)
Put the butter in a pot on the stove and let it melt at a low heat. Gradually add the marshmallows and keep stirring so it doesn't burn! Once that mixture is completely melted and not lumpy, add the vanilla extract and food coloring. Give the mixture a stir, remove the pot from the burner, and mix in your Rice Krispies. Finally, mix in the Lucky Charm's (but save a little bit to decorate the tops of the finished product too!)
Once you have your beautiful pot of sticky green goodness, you can press it into a greased 9x13 pan so that they'll form into bars. Cut into even pieces and decorate the top with a few extra Lucky Charm marshmallows.
